Soup with nettle and green onion

Region: New Nordic Diet in Europe (Belarus)
Main components: nettle, green (spring) onion, chicken bouillon (broth)
Estimated cooking time: 15-20 minutes
Portions: 4


  1. Green onion – 40 g
  2. Nettle leaves – 40 g
  3. Chicken bouillon (broth) – 1 liter (can be replaced with vegetable broth)
  4. Milk (I used low-fat) – 150 ml
  5. Potato starch – 1.5 tablespoon
  6. Canola oil – 1 teaspoon
  7. Salt, pepper – to taste

We need to separate nettle leaves from stems. For this:

  1. Put nettle into the hot water and wait for 3 minutes.
  2. Remove nettle from the water.
  3. Put nettle into the cold water and wait for 1 minute.
  4. Remove nettle from the water.
  5. Separate nettle leaves from stems – after being in the hot water nettle will not be prickly, so you can do this easily.nettle leaves.jpg

How to cook:

  1. Cut nettle leaves and green onion.all ingredients - soup with nettle and onion
  2. Fry nettle and onion for 3 minutes on canola oil.fry nettle and onion.jpg
  3. Mix milk, cold chicken broth and potato starch.
  4. Bring broth-milk mix to a boil.
  5. Add nettle and onion.
  6. Cook for 4 – 7 minutes.
  7. Serve with fresh vegetables and chicken (I used cooked chicken breast from broth).result.jpg

Taste (personal opinion): One plate of the soup (300-400 ml) is enough to become full. Taste of onion is stronger than nettle taste, so if you would like to increase the amount of nettle in your Diet but do not like its taste very much – this soup can be great help for you.

Tip: If you have some leftover boiled potatoes/rice/pearl barley/etc, you can add them to the soup.
