Home-made granola (lazy oatmeal)

We all heard about ‘lazy mum oatmeal’ or ‘overnight oatmeal’. Mix milk/yogurt with rolled oats, leave in a fridge for 5-7 hours (or night) and in the morning – add some nuts/honey/fruit/etc. I do like lazy oatmeal, but I am too lazy to make it in the evening: need to ask all family members, if they would like oatmeal for breakfast, calculate the number of portions, amount of milk, yogurt, mix all…

What is the solution? 2 steps can make our life easier: 1) prepare a lot of base mix from rolled oats + nuts + seeds + dried fruits; 2) chop the mix with food processor – and no need for fridge: lazy oatmeal is ready in 5 minutes 🙂

The idea is taken from Jamie Oliver’s book ‘Everyday Super Food’.

Ingredients for base mix:

  1. Rolled oats – 500 g
  2. Mix of nuts – 100 g
  3. Mix of seeds – 100 g
  4. Dried fruits – 120 g
  5. Cacao – 1.5 tablespoons (optional)
  6. Ground coffee – 1 teaspoon (optional)

How to cook:

  1. Our ingredients: rolled oats, nuts, seeds and dried apricots.  Granola - ingredients nuts seeds apricots and oats
  2. Preheat oven to 180 degrees C.
  3. Mix rolled oats, nuts and seeds. Nuts and seeds can be selected based on the region where you live – the use of local ingredients is one of New Nordic Diet principles.Mixed oats, nuts and seeds
  4. Put the mix into the oven and cook for 20 – 25 minutes, mixing them every 10 minutes.
  5. Remove the mix from the oven and leave it to cool down.

  7.  Grind the mix with food processor.Ground granola
  8. Base mix is ready. Add yogurt/milk to it, some berries – and your breakfast is ready 🙂 home-made granola result
